Each ingredient reacts differently and for this reason, in professional multi-product equipment, it is absolutely essential to be able to adjust the temperature, mixing intensity, and holding cycles according to the type of base. Precise temperature control helps to determine the ideal consistency of the product in the tank and, in SPM cold cream equipment, this is achieved by means of an electric probe that constantly monitors the temperature in the tank.

We study it closely.

Ethyl alcohol significantly lowers the freezing point, and even small amounts are enough to affect the consistency of slushes and frozen cocktails, which tend to remain liquid. Recipes containing alcohol therefore require deeper cooling (even down to -10°C in the tank) and strategies for maintaining the temperature over time.

In practice: each percentage of ethanol in the mixture corresponds to one freezing point. For example, 10% mixtures freeze at -5.5°C
