Degrees Brix express the percentage of sugars dissolved in an aqueous solution. 1°Bx corresponds to 1g of sucrose in 100g. It is an instrumental measurement that requires the use of a refractometer. It is related to AFP—the anti-freezing power that derives from the composition of the mixture and determines the consistency of the frozen product—but does not concern SP—the sweetening power that influences sensory perception and organoleptic balance.
Please note! Just as in a good preparation AFP and SP are balanced, good equipment has flexible cooling and mixing parameters that can be configured for compatibility with multiple products.
