In the case of mixes for the HoReCa sector, granulometry does not only concern grain size but is a broader concept that includes: chemical-physical composition; the presence of thickeners or anti-caking agents; thermal behavior, i.e., what happens to the powder when it comes into contact with hot water.
For example, if the temperature is too high or rises suddenly, preparations with a high sugar content risk caramelization, i.e., the formation of caramel crystals that spoil the texture in the cup.
